1315028 - Add new fields to mobile_clients

The following new fields need to be added to the "mobile_clients" dataset:

- defaultSearch string optional
- defaultNewTabExperience string optional
- defaultMailClient string optional


Note: I am not entirely sure if "mobile_client" is the dataset name. We are adding these fields to the iOS Core Ping.

(That is also why I made them optional, they won't exist in all versions and not on Android at all)

Thanks for writing this documentation, Stefan.

The documentation for these probes seems good (details, why, how), and probes similar to the newtab and defaultsearch are (I believe) already in Android.

Since this is just adding to the iOS core ping, and there are already legal/privacy documents in place, I'll r+ this data change. I also noticed the link in the swift file is 404ing, so if it's not too much work please update that, either to the actual version, or this telemetry doc.

The repository has been updated with the new columns, and tested. Currently running with the new columns.
