We need a script, tool, or command that can fetch and parse raw s3 logs to get simple numbers for validating telemetry. Could it maybe be something as simple as grep for a string/token and count the instances?

The "heka-s3cat" and "heka-s3list" tools can be used to interact with the data in S3. Are those sufficient for testing?
